Receta Chocolate Chip Zucchini Cake
Don't let the zucchini fool you the is a very decadent cake especially when you the cake is just cooled but the chocolate chips are still very gooey so every fork full of cake is met with a luscious melted chocolate full bite .
Ingredientes
- 1/2 C Butter softened
- 1 3/4 C Sugar
- 1/2 C Vegetable oil
- 2 Eggs
- 1 tsp Pure vanilla extract
- 2 1/2 C All purpose flour sifted
- 2 Tbl Dutch cocoa powder
- 1 tsp Baking soda
- 1/2 tsp Baking powder
- 1/2 tsp Ground cinnamon
- 1 tsp Salt
- 1/2 C Buttermilk
- 2 C Peeled shredded zucchini
- 2 C Semi sweet chocolate chips ( I used Ghiardelli)
Direcciones
- Pre heat oven to 350 degrees
- In a large bowl cream together the softened butter and sugar
- Beat in the oil, eggs and vanilla
- Combine all the dry ingredients In a separate bowl and add to the creamed mixture alternating with the buttermilk
- Stir in the shredded zucchini
- Pour into a greased 9x13 pan
- Sprinkle the top with the chocolate chips
- Bake at 350 degrees for 40 - 45 minutes or until a inserted toothpick in the center comes out clean
- Cool on a wire cooling rack
