  • 1/2 c. Sugar
  • 1/2 c. Water
  • 4 x Egg whites, room temp.
  • 1/4 tsp Cream of tartar
  • 2 c. Cream, whipping, whipped to soft peaks
  • 1 c. Cocoa, unsweetened
  • 4 ounce Chocolate, semi-sweet, melted, cooled to room temperature
  • 3 Tbsp. Espresso pwdr, instant

Direcciones

  1. For Mousse:Heat sugar and water in heavy saucepan over medium-low heat till sugar dissolves, stirring occasionally and brushing down any crystals from sides of pan with brush dipped in cool water. Increase heat and boil till mix registers 240 F (soft ball stage) on a candy thermometer.
  2. Meanwhile, beat egg whites and cream of tartar till soft peaks form.
  3. Slowly pour in warm syrup, beating till mix is cold, about 5 min
  4. Gently mix in whipped cream, cocoa, melted chocolate and espresso.
  5. Cover and chill for 1 hour.
