  • 3 x Large eggs Cream cheese - to taste
  • 1/4 c. Chives - minced
  • 1 x Boneless, skinless chicken breast
  • 2 Tbsp. Extra virgin olive oil
  • 6 x Roma tomatoes - peeled, and sliced
  • 1/4 x Onion, finely minced
  • 2 Tbsp. Cilantro minced
  • 1 x Jalepeno pepper - seeded and chopped Salt and pepper
  • 1 x Bagel - toasted

Direcciones

  1. Directions: In a small bowl, scramble Large eggs, cheese and chives. Cook over medium heat to desired doneness. Lb. the chicken breast thin.
  2. Heat oil in a pan and saute/fry chicken till done. Combine diced tomatoes, onion, cilantro, jalepeno and salt and pepper to create salsa. Serve all together with toasted bagel.
