Receta Cinnamon Wheat Bran Pancakes

Ingredientes
- 3/4 c. Wheat flour
- 3/4 c. Unbleached flour
- 3/4 c. Wheat bran* -- unprocessed
- 2 Tbsp. Granulated sugar
- 1/2 Tbsp. Baking pwdr
- 1/2 Tbsp. Baking soda
- 2 tsp Cinnamon
- 1/4 tsp Salt
- 2 x Egg whites -- whipped
- 1/4 c. Applesauce -- at room Temperature
- 1 1/2 c. Buttermilk* -- at room Temperature
- 1 tsp Vanilla

- Prepare skillet with cooking spray and heat on medium till warm. In a mixing bowl, combine flour, wheat bran, baking pwdr, baking soda, cinnamon, and salt. In another mixing bowl, combine egg whites, applesauce, buttermilk, and vanilla. Mix wet ingredients with dry ingredients just till moistened. Ladle in the batter, using 2 or possibly more Tbsp. per cake. Cook for 2 min, then flip carefully and cook for 2 min more. Repeat with remaining batter.
