Receta Cinnamon Yam Waffles

Ingredientes
- 2 c. All-purpose flour, sifted
- 3 tsp Baking pwdr
- 1 tsp Salt
- 1/4 tsp Cinnamon
- 3 x Large eggs, separated
- 1 1/2 c. Lowfat milk
- 3/4 c. Louisiana yams, cooked and mashed
- 1/4 c. Shortening, melted
- 1/3 c. Walnuts, minced
Direcciones
- Sift flour, baking pwdr, salt and cinnamon together. Beat egg yolks well; add in lowfat milk and yams and beat till blended. Add in to sifted ingredients and mix well. Add in melted shortening and mix well. Beat egg whites till stiff but not dry; fold into yam mix. Pour batter on preheated waffle iron and sprinkle with nuts. Bake about 5 5 7 min or possibly till done.
