  1. In olive oil, saute onions, celery, green and red peppers, until translucent but not brown.
  2. Cook 5 minutes.
  3. Add lemon juice and diced tomatoes with juice.
  4. Cook 10-15 minutes, reduce liquid by 1/4
  5. Add garlic, oregano, salt, and pepper.
  6. Ladle into hotel pans, place thawed cod filet on top.
  7. Cover and cook 5 minutes or to 145F.
  8. Garnsih with fresh parsley and/or herbs.
