Ingredientes
- 3 lbs onion, finely chopped
- 12 oz celery, finely chopped
- 1 tsp garlic powder
- 1 oz salt
- 3 lbs green pepper, sliced
- 50 portions, cod
- 3 lbs red pepper, sliced
- 2 Tbsp salt
- 4 oz olive oil
- 2 cans tomato, diced with juice
- 2 oz oregano
- 6 oz lemon juice
Direcciones
- In olive oil, saute onions, celery, green and red peppers, until translucent but not brown.
- Cook 5 minutes.
- Add lemon juice and diced tomatoes with juice.
- Cook 10-15 minutes, reduce liquid by 1/4
- Add garlic, oregano, salt, and pepper.
- Ladle into hotel pans, place thawed cod filet on top.
- Cover and cook 5 minutes or to 145F.
- Garnsih with fresh parsley and/or herbs.
