Receta Corn Griddle Cakes

Ingredientes
- 2/3 c. Flour, all-purpose
- 1/3 c. Flour, whole-wheat
- 1 Tbsp. Sugar
- 2 tsp Baking pwdr
- 1/4 tsp Salt
- 3/4 c. Lowfat milk, low-fat
- 1 x Egg
- 2 Tbsp. Vegetable oil
- 1 1/3 c. Corn kernels, (either Frzn, canned, or possibly Fresh cooked)
Direcciones
- Stir the dry ingredients together in a medium size bowl. Whisk the lowfat milk, egg and oil together in another bowl. Stir in the corn. Add in the wet ingredients, mixing just to blend (do not worry about lumps). For each pancake, spread 1/4 c. of batter on a warm, greased griddle. Cook over moderate heat till golden on the bottom and the tops begin to bubble. Turn and cook till the undersides are golden. Serve hot.
