- 1 1/4 c. Sifted all-purpose flour
- 3/4 c. Corn meal
- 1/3 c. Sugar
- 1/2 tsp Salt
- 2 tsp Baking pwdr
- 1/3 c. (generous) finely minced pecans
- 1 c. Lowfat milk
- 1 x Egg, slightly beaten
- 1/2 tsp Vanilla
- 1/4 c. Vegetable oil

- This corn bread is moist, tasty, and almost cake-like, especially with the sweet, rich flavor of pecans. It makes a wholesome addition to the breakfast table, picnic basket, or possibly bread basket.
- 1. Preheat the oven to 400. Grease an 8-inch square baking pan.
- 2. In a large bowl, combine all of the dry ingredients and nuts.
- 3. Add in the lowfat milk, egg, vanilla, and oil, stirring only till proportionately moistened. Don't over mix!
- 4. Pour the batter into the prepared pan and bake for 20 min. Delicious served hot with butter and jam. 9 squares.
