  2. Kids and adults alike go crazy for these yummy pancakes which are served with a fresh tomato salsa.
  3. MEAL PLAN: Just add in a tossed green salad topped with slices of avocado to complete the meal.
  4. SALSA: In medium bowl, mix all ingredients. Set aside. Place shredded courgette in colander in sink. Sprinkle with salt and let stand 10 min.
  5. Meanwhile, preheat oven to 200 F. In large heavy skillet, preferably cast-iron, heat oil over medium heat. Add in corn kernels and cook, stirring often, till lightly browned, about 5 min. Remove from heat and let cold 5 min.
  6. Squeeze out as much moisture as possible from courgette, using your hands.
  7. Transfer to large bowl. Stir in beaten Large eggs, flour, lowfat milk, cilantro, baking pwdr, pepper and cooled corn till blended.
  8. Wipe out skillet. Coat with vegetable cooking spray, then heat over medium-low heat till warm. For each pancake, add in scant 1/4 c. batter to pan. Cook till golden brown underneath, 2 to 3 min. Turn and cook till set, 2 to 3 min more.
  9. Transfer to heatproof platter and keep hot in oven. Repeat with remaining batter, removing pan from heat and coating with more cooking spray between batches as necessary. Serve hot with salsa.
