Receta Craig Claiborne's No Salt Chili Con Carne

Ingredientes
- 1 Tbsp. Oil,vegetable
- 3 x Onions
- 1 x Pepper
- 1 1/4 lb Beef,coarse grind
- 2 x Cloves garlic
- 2 Tbsp. Red chile,warm,grnd
- 1 Tbsp. Red chile,mild,grnd
- 1 tsp Cumin
- 1 tsp Oregano,dry,pref. Mexican
- 1 x Bay leaves
- 1/2 tsp Pepper
- 4 c. Tomatoes
- 1 Tbsp. Red wine vinegar
- 1/4 tsp Chile caribe
Direcciones
- 1. Heat the oil in a deep skillet over medium heat. Add in the onions and green pepper and saute/fry till the onions are translucent/soft, about 3 min.
- 2. Sprinkle the meat with the garlic, grnd chile, cumin, and oregano.
- Stir to blend. Add in the meat to the skillet. Break up any lumps with a fork, stirring occasionally till the meat is proportionately browned.
- 3. Add in the bay leaf, pepper, tomatoes, vinegar, and caribe. Bring to a boil, lower the heat and simmer 1 hour, stirring occasionally. Taste and adjust seasoning.
