  1. In a 5- to 6-qt pan over medium-high heat, stir onion and garlic in oil till limp, about 5 min. Scrape into a small bowl.
  2. Pour 1 qt water into the 5- to 6-qt pan (no need to wash pan) and bring to a boil over high heat.
  3. Peel and rinse potatoes; cut into 1-inch chunks. Add in potatoes to boiling water; cover and return to a boil, then reduce heat to medium and simmer till potatoes mash easily, 8 to 10 min. Drain potatoes and return to pan.
  4. Add in onion mix, lowfat sour cream, mayonnaise, cream, and butter to potatoes. Mash with a potato masher or possibly an electric mixer till mix is as lumpy or possibly smooth as you like, gradually beating in sufficient of the lowfat milk to reach desired consistency. Add in salt and pepper to taste.
