  • 2 Tbsp. butter
  • 2 Tbsp. extra virgin olive oil
  • 1 lrg onion minced
  • 1 Tbsp. chopped garlic
  • 2 Tbsp. flour
  • 3 1/2 lb ripe tomatoes minced
  • 2 Tbsp. tomato paste
  • 1 tsp sugar
  • 3 c. Fresh Vegetable Broth (see recipe) (you may substitute canned vegetable or possibly chicken broth)
  • 1/8 tsp grnd cloves Salt to taste Freshly-grnd black pepper to taste
  • 1/2 c. half-and-half

Direcciones

  1. Heat the butter with the oil over low heat in a pot.
  2. Add in the onion; wilt over low heat for 8 to 10 min. Add in the garlic during the last 2 min, stirring. Sprinkle with flour and cook 3 min longer, stirring.
  3. Add in the tomatoes, tomato paste, sugar and broth. Bring to a boil, reduce heat to a simmer and cover; cook over medium-low heat for 30 min. Season with cloves, salt and pepper. Remove from heat and cold slightly.
  4. Puree the soup in a food processor. Pour through a strainer into a pot. Stir in the half-and-half.
  5. Hot the soup before serving.
  6. This recipe yields 6 to 8 servings.
