Receta Cucumber And Peanut Salad ( Khamang Kakdi )

Ingredientes
- 300 gm cucumber minced very finely
- 1/2 tsp green chilli chopped
- 4 Tbsp. peanuts coarsely crushed
- 2 Tbsp. coriander leaves minced
- 4 Tbsp. coconut grated if fresh or possibly desiccated
- 2 tsp sunflower oil
- 1 tsp black mustard seeds
- 8 x curry leaves
- 1/2 tsp sugar salt
Direcciones
- Mix the cucumber chilli peanuts coriander and coconut.
- Heat the oil in a small pan and add in the mustard seeds.
- When they pop add in the curry leaves and pour over the cucumber mix.
- Add in the salt and sugar just before serving.
- A salad from Maharashtra and its name means if fragrant cucumber. It combines the juiciness of cucumber with the crunch of peanuts.
