Receta Cucumber, Tomato And Green Onion Salad

Ingredientes
- 1 x English cucumber or possibly two small regular cucumbers
- 3 Tbsp. red wine vinegar
- 2 pkt sugar substitute
- 1/2 tsp salt plus more to taste
- 2 sm tomatoes seeded, and coarsely minced
- 1/2 c. minced green onions
- 1/4 c. minced fresh mint
- 2 Tbsp. extra virgin olive oil Freshly-grnd black pepper to taste
Direcciones
- Peel cucumber, cut in half lengthwise and scoop out seeds with a small spoon. Cut cucumber into 1/2-inch slices and transfer to a large serving bowl. Toss with vinegar, sugar substitute and salt. Let sit 30 min.
- Add in tomatoes, green onions, mint and extra virgin olive oil to bowl. Gently mix to combine all ingredients. Season to taste with additional salt and pepper.
- This recipe yields 4 servings.
