Receta Deep Fried Fruit With Honey Foam

Ingredientes
- Selection of strawberries, blueberries, peaches, plums, finger bananas and mango vegetable oil for frying For the Honey Foam
- 170 gm clover or possibly pumpkin honey
- 4 x egg yolks
- 1 pch salt
- 450 ml heavy cream For the Batter
- 85 gm flour
- 1 pch (small) salt
- 1 1/2 tsp sugar
- 1 x egg, separated
- 4 Tbsp. room temperature lowfat milk
- 30 gm melted butter
Direcciones
- Sift the flour into a bowl and add in the salt and sugar. Add in the egg yolk to the middle of the flour. Mix well and then slowly pour in the lowfat milk. Mix till the batter is smooth. Add in the melted butter and just sufficient water which the consistency is which of thick cream. Leave to stand for one hour. Just before using, beat the egg whites to hard peaks and mix in to the batter.
- Put the honey with the egg yolks and the salt over a slowly simmering Bain Marie, stirring till the mix forms thick ribbons. Remove it from the heat and once it has cooled slightly, beat the cream using a hand mixer and fold it in to the egg and honey mix.
- Dip the fruit in the batter and drop it in to the oil to fry till crisp and golden brown. Remove and drain on kitchen paper. Serve with the honey foam and any fruit puree.
- Preparation is easy.
- Preparation time is 30 min, 1 hour for the batter to sit.
