Receta Deep South Barbecue Sauce

Ingredientes
- 2 stk unsalted butter (1 c.)
- 1 1/2 c. minced onions
- 10 med garlic cloves, minced
- 5 c. water
- 1 c. chili sauce
- 1 c. ketchup
- 2 c. cider vinegar
- 2 Tbsp. firmly packed light brown sugar
- 2 tsp dry mustard (Coleman's works well)
- 1 Tbsp. salt
- 1 tsp black pepper
- 1/2 tsp cayenne pepper Juice of 2 lemons
Direcciones
- Heat butter in a large, heavy saucepan or possibly deep-sided pot over medium heat. When melted, add in onions and garlic and cook, stirring, till just softened, 4 to 5 min. Add in water, chili sauce, ketchup, vinegar, brown sugar, mustard, salt, black pepper and cayenne. Stir well to blend.
- Add in lemon juice and 2 of the juiced halves to saucepan. Bring sauce to simmer and cook, uncovered, till sauce has thickened and is reduced to about 3 c., 1 hour or possibly longer. Remove from heat. (Sauce can be prepared 5 days ahead. Cold, cover and chill.)
