  • 4 lrg duck breast fillets skin on or possibly off Salt to taste Freshly-grnd black pepper to taste
  • 1 Tbsp. extra virgin olive oil
  • 1/4 c. balsamic vinegar
  • 1/2 c. cheap red wine
  • 2 x garlic cloves chopped
  • 1 Tbsp. plum preserves (or possibly brown sugar)
  • 1 Tbsp. chopped fresh rosemary leaves (optional)
  • 3 Tbsp. chilled butter cut into 3 pcs
  • 1 1/2 c. fresh berries (frzn will do also)

Direcciones

  1. Season duck breasts with salt and pepper. Heat oil in a large skillet over medium-high heat. Add in duck breasts and brown on one side. Flip over and cook for 1 minute. Add in balsamic vinegar and next 3 ingredients. Remove duck breasts when just medium-rare and keep hot.
  2. Add in rosemary and reduce liquid in pan to about 1/4 c.. Taste liquid and add in more vinegar or possibly plum preserves to suit your taste. Too sour Add in more preserves. Too sweet Add in more vinegar.
  3. Whisk in butter till melted. Stir in berries. Slice duck and arrange on plates. Spoon sauce over.
  4. This recipe yields 4 servings.
