Receta Duck Breasts With Balsamic Berry Sauce

Ingredientes
- 4 lrg duck breast fillets skin on or possibly off Salt to taste Freshly-grnd black pepper to taste
- 1 Tbsp. extra virgin olive oil
- 1/4 c. balsamic vinegar
- 1/2 c. cheap red wine
- 2 x garlic cloves chopped
- 1 Tbsp. plum preserves (or possibly brown sugar)
- 1 Tbsp. chopped fresh rosemary leaves (optional)
- 3 Tbsp. chilled butter cut into 3 pcs
- 1 1/2 c. fresh berries (frzn will do also)
Direcciones
- Season duck breasts with salt and pepper. Heat oil in a large skillet over medium-high heat. Add in duck breasts and brown on one side. Flip over and cook for 1 minute. Add in balsamic vinegar and next 3 ingredients. Remove duck breasts when just medium-rare and keep hot.
- Add in rosemary and reduce liquid in pan to about 1/4 c.. Taste liquid and add in more vinegar or possibly plum preserves to suit your taste. Too sour Add in more preserves. Too sweet Add in more vinegar.
- Whisk in butter till melted. Stir in berries. Slice duck and arrange on plates. Spoon sauce over.
