- 1 x egg
- 1 tsp salt
- 2 1/2 ounce flour Bread crumbs

- Mash potatoes; blend in egg, salt and flour. Fold in just sufficient bread crumbs to make a hard dough. Form dumplings with wet hands. Simmer dumplings in lightly salted water till they surface. Don't simmer for too long; dumplings may fall apart.
