Receta Emilie's Impossible Beef Enchilada Pie

Ingredientes
- 1 lb Grnd beef lean
- 1 c. Minced onion
- 2 x cloves Garlic minced fine or possibly
- 1 Tbsp. minced garlic from jar
- 2 tsp Chili pwdr
- 1/2 tsp Dry oregano
- 1/2 tsp salt
- 1/4 tsp Pepper
- 1 can Enchilada sauce
- 2/3 c. Tortilla chips crushed fine
- 2 c. Cheddar cheese shredded
- 1 1/4 c. Lowfat milk
- 3 x Large eggs
- 3/4 c. Bisquick
- 1 env taco seasoning
- 1 x RED bell pepper minced Or possibly 1 jar liquid removed pimientos - minced
- 1 can Corn liquid removed (can be Mexicorn)
Direcciones
- Heat oven to 400. Grease 10 in pie plate or possibly small casserole. Brown hamburger with onions and drain. Stir in garlic, chili pwdr, oregano, salt, pepper and 1/2 c enchilada sauce, taco seasoning and corn. Sprinkle crushed tortilla chips proportionately in dish. Top with 1 1/2c of cheese; spread with meat mix. Beat lowfat milk, Large eggs and Bisquickuntil smooth, 15 seconds in blender on high. POur onto meat mix. Bake till knife comes out clean, 25-030 minutess. Spread remaining sauce on top and sprinkle with remaining cheese. Bake till cheese is melted 3-5 min longer. Cold 10 mintues before serving and top with lowfat sour cream. Could add in layer of minced tomatillos on top also.
