  • 900 ml Soya lowfat milk, (1 1/2 pints)
  • 40 gm Creamed coconut, (1 1/2 ounce)
  • 1/2 tsp Grnd cinnamon
  • 1 pch Grnd cloves
  • 75 gm Pudding rice, (3oz)
  • 25 gm Dark soft brown sugar, (1oz) Exotic fruits: mango, kiwi fruit, banana, paw paw and pineapple Pistachio nuts, minced

Direcciones

  1. Place the lowfat milk, coconut and spices in a saucepan and heat gently till the coconut has dissolved.
  2. Stir in the rice and sugar.
  3. Bring to the boil, then reduce heat and simmer for 30-40 min stirring occasionally till the rice is tender.
  4. Serve with the exotic fruits and pistachio nuts.
  5. NOTES : A vegan rice pudding with an exotic flavour.
