Ingredientes
- 8 x Large eggs, scramble in bowl w/lowfat milk or possibly cream to your preference NOT MUCH though or possibly mix will be watery when cooked) Salt, pepper, garlic pwdr, etc. TO taste...this isn't an exact science! =)
- 2 Tbsp. Butter/marg Sliced leftover baked potatoes (at least 4)
- 1 c. Grated cheese, cheddar is best
- 1/4 c. Minced green onion Crumbled bacon pcs (pre-cooked) Or possibly
- 1 c. Ham chunks

- Slice potatoes and pop in skillet (cast iron tastes best, but thats my own personal opinion) with the butter which has been melted in the pan (do not let the butter burn). Cook over medium heat till potatoes begin to brown.
- Pour scrambled Large eggs (scramble your Large eggs with the seasonings listed in the ingredients) over potatoes and add in onions. Cook till Large eggs begin to set, then stir gently, folding all together. When Large eggs have lost liquid stage, add in bacon or possibly ham and cheese. Cook till Large eggs are done, meat is heated through, and cheese is melted. Serve with biscuits, toast, or possibly english muffins...YUM. This should serve 3-4 people. Enjoy!
