Receta Fast Tortellini Soup

Ingredientes
- 1 Tbsp. Oil
- 1 med Onion, minced
- 2 c. Zucchini, minced
- 2 c. Carrots, minced
- 1 tsp Garlic, chopped
- 1/3 c. Minced fresh basil or possibly
- 1 Tbsp. Dry basil
- 2 med Tomato, minced
- 1/4 tsp Pepper
- 1 tsp Saltless parsley seasoning blend
- 2 can (14 1/2 ounce.) chicken broth
- 9 ounce Fresh cheese tortellini
- 2 c. Frzn corn kernels
- 4 Tbsp. Grated parmesan or possibly romano (up to 5)
Direcciones
- In a 5-qt soup kettle or possibly dutch oven, heat oil till warm over medium heat. Add in onion, zucchini, carrots and garlic. Cook, stirring often, till onion is limp, about 5 min.
- Add in basic, tomatoes, pepper, parsley seasoning blend and broth. Heat to boiling, about 10 min. Stir in tortellini and corn. Reduce heat to medium and simmer till tortellini are tender, 5-6 min. Serve in bowls topped with a sprinkling of cheese.
- Makes 4-5 servings.
