Receta Fava Bean Cakes With Diced Red Peppers And Yogurt

Ingredientes
- 2 c. canned fava beas liquid removed, rinsed
- 1 lrg egg
- 1 x onion peeled, diced
- 1 tsp chopped garlic
- 1 Tbsp. extra virgin olive oil plus extra oil for frying
- 1 Tbsp. fresh lemon juice
- 3 Tbsp. all-purpose flour
- 2 Tbsp. minced Italian parsley
- 1 1/2 c. plain low-fat or possibly regular yogurt
- 1 x red pepper seeded, diced
Direcciones
- Combine fava beans, egg, onion, garlic, 1 Tbsp. extra virgin olive oil, lemon juice and 1 Tbsp. parsley in food processor. Process till coarsely minced and well combined.
- Heat 2 to 3 Tbsp. oil in large skillet over medium heat. When warm, scoop 1/4 c. bean mix into oil and repeat till skillet is full. Cook for 2 to 3 min on one side, and when hard and slightly brown, turn over to cook other side. Carefully remove from skillet and place on plates. Repeat with remaining bean mix till mix is used up.
- To serve, spoon generous scoops yogurt over each serving and sprinkle with parsley and diced red pepper. Serve immediately.
