Receta Fig Filled Cookies

Ingredientes
- 1/2 c. shortening
- 1/2 c. brown sugar
- 1/2 c. white sugar
- 2 large eggs
- 2 c. flour
- 1/4 teaspoon salt
- 1/2 teaspoon soda
- 1 teaspoon vanilla
- 1 c. minced dry figs (snip with kitchen scissors)
- 1/4 c. sugar
- 1/2 c. pecans, minced (optional)
- 1 T lemon juice
- 1/3 c. water
Direcciones
- Cream shortening; add in sugars, beat till fluffy. Add in large eggs, mix well. Sift together dry ingredients. Add in to egg mix. Stir in vanilla. Refrigerate thoroughly. Dough is very sticky. Roll 1/8 inch thick on lightly floured surface. Cut with lightly floured cookie cutter. Place a tsp of filling on one cookie. Top with another and press edges together with lightly floured fork tines or possibly put filling on one half of cookie and fold other half over. Press edges together. Bake on greased cookie sheet in 400 degree oven for about 10 min.
- Cook figs, sugar and water till thick, stirring often (about 5 min). Add in nuts and lemon juice. Cool. You can use dates or possibly fig preserves (liquid removed).
