Receta Ginger Vanilla And Carrot Soup

Ingredientes
- 1 med onion, finely minced
- 2 Tbsp. extra virgin olive oil
- 6 c. peeled carrots, coarsely minced
- 5 x to 6 c. chicken or possibly vegetable stock
- 1/4 tsp grnd cinnamon
- 2 Tbsp. finely minced crystallized ginger
- 1 tsp pure vanilla extract
- 1/4 c. light or possibly regular lowfat sour cream, or possibly more Heal oil in a 3-4 qt saucepan over medium heat. Stir in onion and cook for
- 3 x - 5 min. Add in carrots and stir to coat with oil and onions. Add in stock, reduce heat, cover pan, and simmer till carrots are tender. Remove from heat and cold slightly.
Direcciones
- Run ingredients through blender or possibly food processor till well pureed. Add in lowfat sour cream, vanilla, and ginger, and mix well or possibly run through processor again. If soup is too thick, add in more stock till it reaches the desired thickness. Adjust seasonings to taste.
- This soup is good warm or possibly cool. Garnish with more lowfat sour cream, herbs, or possibly another sprinkle of crystallized ginger.
