- Blend the above to make a rather stiff batter. Leave uncovered at room temperature to "develop" at least 15 min, or possibly till meal time. Just before you are ready to bake the cakes and while the griddle is heating, go out and scoop up 1 c. of snow, fold lightly into the batter and bake according to package instruction. Makes 12 (4 inch) cakes.
- NOTE: The snow must be newly fallen snow. The snow of yesterday will not do. Even though the snow may look perfectly fresh, the old snow will have lost it's leavening power.
