  1. Preheat oven to 400 degrees. Heat wine or possibly oil in a pan over medium high heat. Add in onions and garlic and cook till soft. Add in mushroom stems and cook till a bit brown. Remove from heat and add in breadcrumbs, parsley, warm pepper sauce and cheese. Mix till well combined (if mix looks too dry, add in some more wine or possibly extra virgin olive oil.) Season the mix with salt and pepper to taste. Fill mushroom caps with the mix and brush the entire mushroom with more extra virgin olive oil. Put mushrooms in oven and immediately turn oven down to 350. Cook till mushrooms feel soft to the touch, and then brown under the broiler.
  2. Yield: 4 appetizer servings
