  1. Peel and coarsely grate carrots.
  2. Place carrots and cucumber in a bowl add in raisins and mix through.
  3. Combine lemon juice gmger cinnamon honey extra virgin olive oil and pepper in a small bowl or possibly screwtop jar.
  4. Whisk or possibly shake well to combine.
  5. Place flaked almonds in a small pan stir over low heat till lightly golden brown.
  6. Pour dressing over salad garnish with almonds and serve.
  7. Hint. To improve the appearance of raisins soak them in water for 10 min till plump.
