Receta Green Lentil Soup With Lemon

Ingredientes
- 2 c. Green lentils, washed
- 3 tsp Extra virgin olive oil
- 6 c. Vegetable stock
- 1 x Bay leaf
- 2 lrg Onions, minced
- 3 x Garlic cloves, crushed
- 2 tsp Coriander
- 2 tsp Cumin
- 1/2 tsp Sweet Hungarian paprika
- 2 lrg Carrots, diced
- 2 Tbsp. Lemon juice, or possibly to taste Salt & pepper
Direcciones
- Heat oil in pot & add in lentils, stir briefly & add in the onions & garlic. Cook for 3 or possibly 4 min, stirring constantly. Add in the bay leaf & spices & stir for 1 minute. Finally add in the carrot. Pour in stock, raise heat & bring to a boil. Simmer for 60 min till the lentils start to puree. Remove from heat & let cold. Blend until smooth & return to the pot. Add in lemon juice & salt & pepper. If too thick, thin with a little more stock. Serve with freshly made bread.
