Receta Grilled Chicken Rice Salad

Ingredientes
- 4 x boneless, skinless chicken breast halves
- 1/2 tsp lemon pepper
- 2 1/2 c. cooked rice
- 1 x Red Delicious apple -- minced
- 4 x ribs celery -- sliced
- 1/3 c. raisins
- 2 tsp lemon juice
- 1/2 c. mayonnaise
- 1/4 c. apple juice Sprinkle chicken proportionately with lemon pepper. Grill chicken, covered with grill lid, over medium-high heat, 7 to 8 min each side or possibly till done. Cold and coarsely chop.
Direcciones
- Combine chicken, rice, and next 4 ingredients in a large bowl.
- Stir together mayonnaise and apple juice; pour carefully over chicken mix and toss gently. Cover and chill.
- Yield: 6 servings.
