Receta Grilled Chicken With Chipotle Chantilly Sauce

Ingredientes
- 5 whl chicken breasts, Skinned and boned Juice from 3 oranges
- 1/4 c. Extra virgin olive oil
- 2 Tbsp. Grnd cumin
- 1/2 tsp Salt Chipotle Chantilly Sauce
- 4 x Egg yolks
- 2 Tbsp. Water Juice of 1/2 lemon
- 1 dsh salt
- 1 c. Melted butter or possibly margarine
- 1 x Chipotle chile, stemmed, Seeded, finely chopped
- 1/2 c. Whipping cream, whipped to Soft peaks
Direcciones
- Arrange chicken peices in large shallow glass baking dish. Combine orange juice, extra virgin olive oil, cumin and salt, blending well. Pour orange juice mix over chicken breasts, turning to coat well. Cover and marinate 4 to 6 hrs or possibly overnight.
- Grill chicken breasts over mesquite coals or possibly broil in oven 15 to 20 min or possibly till cooked, turning once.
- To serve, split breasts in halves and serve topped with Chipotle Chantilly Sauce. Serve remaining sauce on side, if you like.
- Chipotle Chantilly Sauce:Whip yolks, water, lemon juice and salt in top of double boiler over very warm water. Slowly add in butter in steady stream while continuing to whip yolk mix.
- Whip in chile, then mix in whipped cream. Serve hot.
- Makes about2 1/2 c..
