Receta Grilled Cornish Game Hens With Chili Butter And Grilled Corn Salsa

Ingredientes
- 6 x dry chili
- 6 Tbsp. butter, melted salt, to taste Grilled Cornish Hens
- 4 x cornish hen Grilled-Corn Salsa
- 4 x ears of corn extra virgin olive oil, for brushing corn
- 1 lrg ripe tomato
- 1/2 med red onion, minced
- 2 Tbsp. fresh cilantro, minced
- 1 Tbsp. fresh lime, juice
- 1/2 c. chicken broth salt, to taste
Direcciones
- Soak the chilies in hot water for 2 hrs.
- Remove the chilies, reserving the liquid. Remove stems and seeds.
- With a food processor, blend the chilies with 1/3 c. reserved chili water. Blend till smooth. Add in more liquid if needed and salt to taste.
- Grilled Cornish Hens:Place the hens in a large glass bowl and pour chili butter over hens reserving 1 c.. Marinate at room temperature for 1-2 hrs.
- Brush the hens with extra virgin olive oil and place on grill. Put corn (for salsa) on grill also.
- Sear the hens and brown corn for 5 min. Remove corn and let cold.
- Place the hens breast side down and baste with chili butter. Cook for 20 min and turn bird to cook other breast. Baste with butter. Turn birds breast side up and cook for another 20 min.
- Prepare salsa.
- Serve hens on top of salsa.
- Grilled-Corn Salsa:Cut the kernels from the corn.
- Add in remaining salsa ingredients and adjust seasoning.
