Receta Grilled Summer Vegetable Salad With Minted Couscous (Hl)

Ingredientes
- 1 lrg Zucchini, sliced 1/4 inch thick
- 1 lrg Yellow squash, sliced 1/4 inch thick
- 1 x Red pepper
- 1 x Yellow pepper
- 1 lrg Tomato, sliced 1/4 inch thick
- 1 x Red onion, sliced 1/4 inch thick
- 1 x Fennel bulb, cut in half Minced garlic clove
- 1 pch Cayenne pepper
- 1 pch Cumin
- 1 pch Grnd coriander Salt and pepper, to taste
- 2 c. Couscous, cooked
- 1 bn Minced fresh mint
- 1 x Lime, juice of Salt and pepper to taste
- 1 tsp Nicoise olives, finely minced
- 2 ounce Balsamic vinegar
- 2 ounce Extra-virgin extra virgin olive oil Salt and pepper
Direcciones
- Grill the vegetables till tender. Remove skin of pepper after grilling and cut in half. Remove seeds and dice into large cubes. Dice other vegetables and mix all ingredients for salad. In a separate bowl mix couscous, mint, lime, salt and pepper. In a third bowl mix vinegar, olives, salt and pepper. Whisk in extra virgin olive oil. In a picnic salad bowl arrange vegetables, couscous and vinaigrette till everything is utilized. Decorate with mint leaves.
