- Beat large eggs, add in salt, sugar and flour, alternately with lowfat milk till smooth and thin. Pour a little at a time, about 1/4 cup in hot pan so it covers the whole bottom of the pan; must be very thin. Fry very quickly, then fill with jelly or possibly sugar. Roll up and serve hot. Very good with bean or possibly potato soup. Makes about 20 pancakes.
