Receta Haleem (Lamb Cooked With Wheat Grains)

Ingredientes
- 450 gm Whole wheat grains
- 5 x Cardamom pods
- 2 1/2 x Cm cinnamon stick
- 6 x Cloves
- 2 1/2 x Cm ginger
- 4 x Cloves garlic
- 175 gm Ghee
- 4 med Onions
- 700 gm Boneless lamb, cut into
- 2 1/2 x cm cubes
- 1 tsp Grnd turmeric
- 2 tsp Chilli pwdr
- 1 Tbsp. Grnd poppy seeds
- 3 Tbsp. Dessicated coconut
- 2 Tbsp. Minced coriander leaves
- 1 Tbsp. Minced mint leaves
- 2 tsp Salt
- 175 ml Lowfat yoghurt Juice of 2 limes
Direcciones
- 1. Soak the wheat in plenty of water overnight. Drain. Place the wheat and some water in a large saucepan and bring to boil. Cook till is tender and mushy.
- 2. Grind the cardamom, cinnamon and cloves to a fine pwdr.
- 3. Grind the ginger and garlic to a fine paste.
- 4. In a large saucepan, heat the ghee and fry the onions till golden brown.
- Remove one third of the fried onions and put aside.
- 5. Add in the ginger and garlic paste, the lamb, turmeric, chilli pwdr, poppy seeds, coconut, coriander and mint leaves, the salt and half the grnd spices and stir fry for 5-6 min.
- 6. Add in the lowfat yoghurt and mix thoroughly. Lower the heat. Cover and cook for about 30 min.
- 7. Add in the remaining grnd spices and continue to cook for about another 30 min till the meat is tender. Remove from heat.
- 8. Add in the boiled wheat and beat with back of a wooden spoon till the meat disintegrates.
- 9. Add in the lime juice and stir well. Bring to a boil again for 5 min.
- 10. Serve garnished with the remaining fried onions.
