Receta Hearty Spinach And Mushroom Soup

Ingredientes
- 2 tsp butter or possibly margarine
- 8 ounce fresh mushrooms sliced (about 3 c.)
- 1/2 c. carrot finely shredded
- 1/2 c. onion finely minced
- 14 1/2 ounce nonfat chicken broth
- 1 1/2 c. frzn spinach thaw & squeeze dry
- 1/8 tsp nutmeg
- 1 dsh pepper
- 2 c. skim lowfat milk
- 1/4 c. all-purpose flour
- 4 ounce nonfat cream cheese cut in pcs
- 4 ounce lowfat Swiss cheese shredded
Direcciones
- Heat margarine in large nonstick saucepan over medium heat. Add in mushrooms,carrot and onion; cook and stir 3 min. Add in broth, spinach, nutmeg and pepper; mix well.
- In small bowl, combine lowfat milk and flour till well blended. Add in to spinach mix; cook, stirring constantly, till thickened and bubbly. Reduce heatto low. Add in cream cheese and Swiss cheese; cook and stir till melted.
- Serve immediately.
