Receta Hearty vegetable beef soup
A winter staple for my house. This hearty vegetable soup is great for a meal. My kids love it and its a great way for all of us to consume a ton of vegetables.
Ingredientes
- 1 lb lean ground beef
- 1 cup chopped onion
- 1 cup cubed potato
- 1 cup sliced carrots
- ½ cup diced celery
- 1 cup shredded cabbage
- 1 (14 ½ oz) can stewed tomatoes
- ¼ cup rice (uncooked)
- ½ tsp thyme
- ¼ tsp basil
- 5 tsp salt
- 1/8 tsp pepper
- 6 cups water
- Grated parmesan cheese
Direcciones
- In a large soup pan, brown beef and onion together.
- Add potato and water; bring to a boil.
- Add remaining ingredients except cheese.
- Reduce heat and simmer, covered for 1 hour.
- Serve sprinkled with cheese.
