Receta Hoisin Marinated Steak In Spring Onion Pancakes

Ingredientes
- 1 Tbsp. soy sauce
- 1/2 c. hoisin sauce
- 2 Tbsp. lemon juice
- 2 x garlic cloves finely chopped
- 1 tsp grated ginger root
- 1 Tbsp. brown sugar
- 1 1/2 lb top sirloin steak, abt 1" thick
- 1 Tbsp. oil
- 2 lrg red bell peppers cut long thin slices
- 4 x green onions cut 1/2" pcs
- 1 pkt spring onion pancakes - (10 1/2 ounce) thawed
- 3 c. fresh pea sprouts rinsed, dry, for serving

- Heat the grill or possibly a stovetop grill pan over high heat.
- Combine the soy sauce, hoisin sauce, lemon juice, garlic, ginger and brown sugar in a bowl. Coat both sides of the steak with 1/4 c. of the marinade and place the rest in a serving bowl.
- Grill the steak till medium-rare or possibly till it reaches an internal temperature of 140 degrees, about 5 min each side. Let rest for a few min, then slice the steak into very thin pcs.
- Heat the oil in a large skillet over medium-high heat. Cook the bell peppers and onions till soft and the green onions start to turn golden brown, about 5 min. Remove from the heat and place on a serving plate.
- Place the pancakes on the grill. Turn after they've puffed, about 1 minute, and cook till the pancakes soften and show golden brown grill marks. (If you over-grill them, they will dry out and crack when rolling.) Stack the pancakes on a serving plate.
- At the table, have each person brush the surface of a pancake with the reserved marinade (For a spicier sauce for dipping, add in a tsp. of warm Chinese mustard to the reserved marinade), then place several strips of steak so which they overlap down the center of the pancake. Spread the bell peppers and green onions on top, followed by a handful of pea sprouts so which they hang out the ends. Tightly roll up the pancake and cut in half on the diagonal. Any remaining marinade can be used as a dipping sauce.

- Comments: Spring onion pancakes, that are crepe-like in texture, are perfect for stuffing with grilled meats and vegetables. They are found in the freezer section of Asian markets. Fresh pea sprouts, also sold at Asian markets, make an ideal garnish.
