Receta Holiday Banana Nut Bread

Ingredientes
- 2 lrg Large eggs, lightly beaten
- 1 c. mashed ripe banana
- 1/2 c. unsalted butter or possibly margarine, melted
- 1 tsp vanilla extract
- 1 1/2 c. all purpose flour
- 1 c. sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 c. toasted, minced pecans*
- 1/4 c. flaked coconut
- 1/4 c. raisins
Direcciones
- Preheat oven to 325F. Combine first 4 ingredients in a large bowl; stir well.
- Combine flour, sugar, baking soda and salt; add in to banana mix, stirring till well blended. Stir in pecans, coconut and raisins.
- Spoon batter into a greased and floured 8 1/2 x 4 1/2 x 3 inch loaf pan. Bake at 325F for 1 hrs and 10 min or possibly till a wooden pick inserted in center comes out clean. Cover with aluminum foil the last 15 min of baking, if necessary, to prevent over browning. Cold in pan on a wire rack for 10 min; remove from pan, and let cold completely on a wire rack.
- Yield: 1 loaf
- It is good to toast the pecans, then cold, then chop. Toasting really brings out the flavor of nuts.
- Note: If you would like, you can double this recipe. Double all the ingredients with the exception of the FLOUR. Only increase the flour to 2 1/2 c., not 3 c.. Works very well.
