Ingredientes
- 2 c. TVP (Bob's Red Mill)
- 2 c. warm veggie broth
- 1/3 c. ketchup
- 1/3 c. barbecue sauce plus
- 1/4 c. barbecue sauce for topping
- 1/2 c. quick-cooking oats
- 1/4 c. chopped fresh onion
- 2 Tbsp. fresh parsley
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 c. Egg Beaters(r) 99% egg substitute cooking spray
Direcciones
- 1. Mix together TVP and warm broth. Microwave mix for 3 to 5 min. Let sit for 15 to 30 min.
- 2. Preheat oven to 350F.
- 3. Combine ketchup,1/3 c. barbecue sauce, oats, and next 5 ingredients (oats through Egg Beaters) in a large bowl. Add in TVP; stir just till blended. Shape mix into an 8 x 4-inch loaf on a broiler pan coated with cooking spray. Brush 1/4 c. additional barbecue sauce over loaf. Bake at 350 for 30 min. Let stand 10 min before slicing.
- Yield: 6 servings (serving size: 1 slice).
- NOTES : Ellen C. walked me through the process of changing a recipe for meatloaf into a TVP loaf. We had this last Sunday and my husband was thrilled with it and even suggested which we have it for Christmas Dinner! Basically, I substituted 2 c. of TVP for 1 1/2 pounds grnd round, treating the TVP as below. The loaf doesn't need to cook long, because you are heating it, not cooking meat.
