Receta Homemade Meatless Spaghetti Sauce

Ingredientes
- 1 Tbsp. extra virgin olive oil
- 1 lrg onion, finely minced
- 2 lrg clv garlic, crushed (or possibly use dry)
- 1 x 6-ounce can tomato paste
- 2 Tbsp. parsley, finely minced or possibly dry
- 1 tsp dry basil leaves
- 1/2 tsp dry oregano leaves
- 1/4 tsp salt
- 1/8 tsp freshly grnd black pepper
- 1 x 16-ounce can tomatoes with liquid, minced (chop in food processor)
- 1 x 8-ounce can tomato sauce
- 1 sm bay leaf

- In 4-qt saucepan over medium heat, heat oil; add in onions and garlic; cook 4 to 5 min, stirring occasionally till onion is softened. Stir in tomato paste, parsley, basil, oregano, salt, black pepper. Cook about 3 min, stirring. Add in tomatoes with their liquid, tomato sauce, 1 c. water and bay leaf, increase heat to medium-high. Bring to boil; reduce heat to low. Simmer, partially covered, about 1 hour, uncovering to stir occasionally. Remove bay leaf.
- Makes about 4 c..
- This is a really good homemade sauce that can be converted for those which have special dietary needs such as low sodium. If you use low-sodium tomato paste and tomatoes you can cut the sodium for those which need to watch a lot of sodium.
