Receta Honey And Lemon Pancakes With Baked Fruit

Ingredientes
- 200 gm Self raising flour, (7oz)
- 25 gm Castor sugar, (1oz)
- 300 ml Lowfat milk, ( 1/2 pint)
- 1 med Size egg
- 2 Tbsp. Honey
- 1 Tbsp. Lemon zest
- 8 x Plums or possibly 4 bananas, cut into thick pcs
- 25 gm Dark brown sugar, (1oz) Oil for greasing
Direcciones
- Sieve the flour and castor sugar into a bowl.
- Mix the lowfat milk, egg and honey together in a separate bowl and pour it onto the flour whisking to create a smooth batter. Pass the mix through a sieve into a jug. Then add in the lemon zest.
- Cut the plums in half, remove stones and place on a roasting tray. Sprinkle over the brown sugar and grill for approximately 5-8 min till the sugar caramelises. If baking the fruit place the fruit into a pre-heated oven 190 C 375 F, Gas Mark 5 for 10 min.
- Heat 1 tsp. of oil in a heavy based frying pan over a moderate heat.
- Pour a small amount of the mix into the middle of the pan and tilt the frying pan to allow the mix to spread to the edges.
- Cook the pancake for 1 minute on each side. Repeat this using the remaining mix.
- Slide the pancake onto a plate, place 2 pcs of fruit and some ice cream on 1 half of the pancake and fold over. Fill the remaining pancakes with a mix of the fruit and ice cream.
- Notes Alternatively canned fruit or possibly fruit pie filling could be used instead of the plums.
- NOTES : Delicious lemony pancakes with caramelised fruit.
