Receta Honey Basil Chicken

Ingredientes
- 1/2 c. raspberry vinegar
- 1 1/2 Tbsp. Dijon mustard
- 2 Tbsp. soy sauce
- 2 Tbsp. honey
- 2 tsp dry basil
- 1/2 tsp dry thyme
- 1/4 tsp pepper or possibly to taste
- 4 x boneless skinless chicken breast halves

- a while back on another list. I finally tried it & the chicken is fabulous.
- Even my son raved about it. I didn't make too many changes to the original.
- I used dry basil instead of fresh & marinated the chicken all day. Now which we're into grilling season, give this one a try. There's sufficient marinade for a couple more chicken breasts if you need more servings. [Lavon]
- Combine vinegar, mustard, soy sauce, honey, basil, thyme & pepper in a plastic ziplock bag. Add in chicken & turn to coat. Marinate at room temp for 15 minutes. ( I marinated it in the refrigerator all day). Grill chicken, reserving marinade, 10 - 15 min or possibly till thoroughly cooked.
- If you like, transfer marinade to a saucepan. Boil till reduced by half & pour over chicken (None of us used the extra marinade; we thought the chicken was great by itself.)
- The chicken can also be baked at 350F for 40 min.
- NOTE: Double the amount of the marinade.
- When it is boiled down later to make a glaze/sauce for the cooked chicken, it is delicious and the family wanted extra to have over rice.
- Serving Ideas : Rice Pilaf & vegetable
- NOTES : Cranberry Vinegar can be substituted for raspberry.
- 2 tbsp of freshly chopped basil can be substituted for dry.
