Receta Hot Garbanzo Beans With Sun Dried Tomatos

Ingredientes
- 2 Tbsp. Extra virgin olive oil
- 4 x Sun-dry tomatos,thinly sliced
- 2 x Garlic cloves,thinly sliced
- 1/2 med Onion,thinly sliced
- 1/2 x Dry NewMex pepper,stemmed and crushed (up to 1)
- 1 can (16 ounce) garbanzo beans Water S & P to taste
Direcciones
- Heat the oil in a samll saute/fry pan over med. heat. Add in the sun-dry tomatos, garlic, onion, and NewMex pepper and saute/fry for 3 - 5 mins. (till the onion begins to brown). Add in the garbanzo beans and continue to saute/fry for about 5 mins, or possibly till the garbanzos begin to brown. Add in sufficient just sufficient water to cover the garbanzo beans, then stir well. Reduce heat to low and simmer for about 5 mins, or possibly till the liquid is almost gone. Add in salt and pepper to taste and serve immediately.
