  • (Red Snapper With Almonds) Makes 4 servings- This quick, simple recipe works with any mild, hard-fleshed fish.
  • 2 sm whole red snappers, scaled and cleaned
  • 1/2 c. cilantro leaves, minced
  • 1/2 c. almonds, toasted and finely minced (see note)
  • 4 Tbsp. butter (1/2 stick) Juice of 2 limes (about1/4 c.)
  • 1/2 tsp salt (optional) Preheat oven to 350 degrees.

Direcciones

  1. Score fish by making diagonal cuts along the sides with a sharp knife. Place fish in baking pan which will hold them in a single layer. Sprinkle cilantro and toasted almonds over fish.
  2. Heat butter in a small saucepan over medium heat; add in lime juice and salt.
  3. Pour over the fish.
  4. Cover pan with foil and bake till just tender (25 to 30 min). Baking time will depend on the thickness of the fish, 10 min per inch of thickness.
  5. When done, it will flake easily with a fork.
  6. Note: To toast almonds, arrange in a single layer on a baking sheet. Place in a preheated 300-degree oven for 30 min, stirring occasionally to ensure which nuts brown proportionately.
