Ingredientes
- (Red Snapper With Almonds) Makes 4 servings- This quick, simple recipe works with any mild, hard-fleshed fish.
- 2 sm whole red snappers, scaled and cleaned
- 1/2 c. cilantro leaves, minced
- 1/2 c. almonds, toasted and finely minced (see note)
- 4 Tbsp. butter (1/2 stick) Juice of 2 limes (about1/4 c.)
- 1/2 tsp salt (optional) Preheat oven to 350 degrees.
Direcciones
- Score fish by making diagonal cuts along the sides with a sharp knife. Place fish in baking pan which will hold them in a single layer. Sprinkle cilantro and toasted almonds over fish.
- Heat butter in a small saucepan over medium heat; add in lime juice and salt.
- Pour over the fish.
- Cover pan with foil and bake till just tender (25 to 30 min). Baking time will depend on the thickness of the fish, 10 min per inch of thickness.
- When done, it will flake easily with a fork.
- Note: To toast almonds, arrange in a single layer on a baking sheet. Place in a preheated 300-degree oven for 30 min, stirring occasionally to ensure which nuts brown proportionately.
