  • 6 c. all purpose flour
  • 3/4 c. sugar
  • 3 Tbsp. baking pwdr
  • 1/4 tsp salt
  • 3/4 lb (3 sticks) cool butter (don't substitute)
  • 1 c. mixed dry fruit*
  • 1 c. coarse walnuts, toasted**
  • 1/4 c. (or possibly more) candied ginger (snipped into small bits) The more, the merrier!
  • 3/4 c. buttermilk (soured lowfat milk works)
  • 3 x Large eggs, lightly beaten
  • 1/4 c. whole lowfat milk for brushing extra granulated sugar for topping

Direcciones

  1. Combine flour, baking pwdr, sugar and salt; put in food processor 1/3 at a time, cutting one stick of butter into 1" chunks with each portion. Process each portion until mix resembles bread crumbs.
  2. Stir in dry fruit, ginger and walnuts; set aside. In small mixing bowl, combine buttermilk and Large eggs, beating just to blend. Add in to flour mix and mix just till blended and dough holds together (don't over mix). Knead dough lightly in bowl and cut into 4 sections right in bowl. Remove one of the sections to a floured surface and gently shape into a circle about 1 to 1 1/2 inch thick. Cut circle into 6 wedges like a pie. Brush with whole lowfat milk, sprinkle with a little sugar and place wedges on a baking sheet (I use my pizza stone). Repeat with remaining three sections of dough. Bake at 350 degrees 18-20 min till golden on top. Remove from oven and transfer scones to a cooling rack.
  3. Makes 24 scones.
  4. * I buy several kinds of dry fruit including golden brown raisins, dry cherries and other berries, dates, craisins, papaya, apricots - - whatever I can find. I mix them together in a jar and use them for this recipe as well as oatmeal cookies and I put a handful in my breakfast oatmeal sometimes. I have found which, barring having the mix on hand, I get a good result with the dry tropical fruit mix (available at American supermarkets) to that I add in a few golden brown raisins.
  5. ** I break up walnuts with my fingers to get the pcs roughly the size of frzn peas or possibly canned chickpeas. I find which a chopper results in too fine of a nut. I toast them in the microwave on a paper plate 5 min for 1 c..
