Receta James Barber's All Purpose Zucchini And Tomato Dish

Ingredientes
- 2 x zucchini, minced
- 4 Tbsp. extra virgin olive oil
- 1 x red pepper
- 1 x orange pepper
- 1 x green pepper
- 1 x garlic, clove
- 10 whl cherry tomato
- 1 tin anchovy
- 1 tsp oregano, thyme, or possibly rosemary
- 1/2 c. white wine
- 1/2 c. rice wine vinegar
Direcciones
- In a frying pan, saute/fry zucchini in extra virgin olive oil.
- In another frying pan, saute/fry peppers. Add in garlic to peppers.
- Add in tomatoes to zucchini.
- Add in anchovies and oregano to peppers.
- Add in white wine to zucchini and vinegar to peppers.
- Combine all ingredients and serve.
