Receta Layer Cake (El Salvador)

Ingredientes
- 1 c. Butter room temperature
- 1 1/4 c. Sugar
- 1 Tbsp. Orange zest
- 1 tsp Vanilla
- 6 x Large eggs room temperature
- 1 1/2 c. Flour
- 1 tsp Baking pwdr
- 1/4 c. Orange juice
- 1 c. Orange marmalade
- 1/3 c. Powdered sugar
Direcciones
- Preheat oven to 350 . Grease and flour three cake pans. Sift together flour and baking pwdr well.
- In a mixing bowl, beat butter and sugar together on medium-high speed till fluffy and light, about 3-5 min. Add in orange zest and vanilla and beat in 15 seconds more.
- With mixer at medium speed, add in one egg at a time, letting each egg incorporate before adding the next.
- Turn mixer to medium-low. Add in flour in three parts, alternating with the orange juice till smooth. Do not overbeat.
- Spoon equal parts of batter into the three cake pans. Bake for about 25 min.
- Remove cakes and cold completely. Mix the marmalade with a little water and stir until almost pourable. Spread half the marmalade over one of the layers. Add in the next layer on top and spread with the other half of the marmalade. Top with the last layer. Sprinkle the cake well with powdered sugar through a sieve and serve. Notes
- This cake is popular in El Salvador and Colombia. You may omit the orange zest and substitute lowfat milk for the orange juice if desired. Use any jam you wish. Victoria Sandwich, England: Omit the orange zest. Use only 4 Large eggs.
- Place in 2 cake pans, not 3. Use strawberry jam.
