Receta Leek, Bacon And Potato Pottage

Ingredientes
- 8 x Rashers streaky bacon, shredded
- 2 x Onions, sliced
- 2 x Cloves garlic, crushed Thyme and rosemary, minced
- 2 pt Chicken stock
- 4 x Baking potatoes, peeled and diced 1/2 inch thick
- 2 x Leeks, finely sliced
- 1 Tbsp. Flat leaf parsley, shredded
- 30 gm Butter, diced
- 1 sprg chervil, to garnish
Direcciones
- Gently fry the bacon till brown, drain and reserve. In the same pan fry the onions, garlic, thyme and rosemary till golden brown.
- Add in the chicken stock. Add in the baking potatoes. Cook gently till the potatoes are soft and return the bacon and leave to cold.
- When serving, reheat and add in the leeks and flat leaf parsley. Enrich the soup by stirring in the cool, diced butter. Stir and serve in bowls.
- On top of the soup lay sprigs of chervil.
