Receta Main Dish Vegetable Omelette

Ingredientes
- 1/3 c. Butter or possibly margarine
- 1/2 c. Onion, minced
- 1/2 c. Peas, fresh or possibly frzn
- 1/2 c. Green pepper, minced
- 1/2 c. Celery, minced
- 2 Tbsp. Parsley, minced
- 5 whl Large eggs, beaten
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 2 c. Mashed potatoes
Direcciones
- Place butter, onions, peas, green pepper, celery and parsley in a 2 qt casserole. Cover. Microwave at high (100%) till tender crisp, 3 to 4 min.
- Stir Large eggs into potatoes. Stir in salt and pepper. Add in potato mix to vegetables. Mix well. Cover with wax paper. Microwave at medium high (70%)
- till almost set, 8 to 10 min. Let stand 3 to 4 min.
- Makes 4servings.
